DOWNTOWN. This is the original home of Buffalo wings, which were first concocted in 1964 by the bar's original proprietor as a snack for late night patrons. Still available, the wings are smothered with spicy Buffalo sauce and served with celery and bleu cheese dressing. The Anchor Bar is still a local favorite, and the menu features Italian-American entrees and classics like chicken cacciatore. On weekends traveling jazz bands entertain diners.

DOWNTOWN. This local chain boasts nine Buffalo locations, serving up the city's signature bites: wings, beef on weck and frozen custard. Their legendary roast beef comes in several varieties ­ original, beef and cheddar, or BBQ beef ­ served on a kummelweck, sesame, Kaiser or multigrain roll. For dessert, sample the frozen custard flavor of the day, which might be anything from strawberry or banana to cinnamon or pistachio.

CLARENCE. Housed in the award-winning Asa Ranson House, this old-fashioned dining room preserves the region's culinary traditions. Among the kitchen's offerings are sauerbraten and spaetzles, chicken pot pie, and prime rib. A la carte dinner menu available Sunday-Thursday; five-course dinner served Friday-Saturday. EAST AURORA. Housed in a charming timber-framed building, this friendly watering hole is an appealing spot to down an icy mug of beer and hearty sandwich. The kitchen's specialty, beef on weck, features slow-roasted beef, carved while you wait. Buffalo's namesake chicken wings come in a variety of seasonings ­ choose among honey dijon, Cajun, Jamaican, hot and spicy BBQ and teriyaki wasabi.
